Odd question to ask a stranger, but if you find yourself staring at an absurd amount of summer corn in your fridge (like I am doing, right this moment), know that I consider it a niche problem… Summertime produce can peak, and when it does, it hits fast!

Okay, I’m overwhelmed with choice. There’s just a million recipes out there.

But I stumbled across this giant corn fritter recipe on King Arthur Baking; one detail immediately caught my eye: it was created by Sarah Jampel, and I’ve loved her work since her Bon Appétit days, so I knew I had to give it a shot.

So, let’s get testing and review.

🍽️ The Honest Review: Taste, Texture, and Technique

  • Taste Profile: A nice balance of sweet and savory from both the corn and the seasonings.

  • Texture Talk: First bite had a little crunch from the sides of the fritter where the edges meet the side of the skillet. The center was tender with a little cheesiness.

  • Technique & Practicality: Was the recipe easy to follow? Did any steps trip you up? Did the ingredient list feel overwhelming or simple? (e.g., The only fiddly bit was thinly shredding the Brussels sprouts, but a food processor saved the day. Everything else was straightforward.)

  • "Keeps Well" Factor: It’s not a big portion, so it was gone a quick as it was made! Cut into 4 slices, so we each had two pieces during testing.

👩‍🍳 Our Delicious Tweaks & Why We Made Them

  • The Swap: I had mild cheddar on hand, so with this batch I used it. I think you can really add any type of cheese that you can grate, like a sharp cheddar or gruyere

  • The Addition: I added a little extra spice with the seasonings and an extra pinch of salt, it helped with the flour batter and gave it a bit more flavour.

  • Recommendation: I think a handful of crumbled feta would add a lovely salty pop here! As Sarah mentioned in her post, piling on some salad greens would really finish it off, and make it more of a meal than a snack.

⭐ The Verdict: Would We Make It Again?

I would make this again. It was way more simple than I thought, and it got me thinking about all the other fritters that I love and don’t make because let’s be honest, making fritters can be really time consuming!

The Final Word: Yes or No?

Yes! But I will admit, this isn’t something I’ll be making all the time. It’s a great way to make a veggie fritter when we have too much of the ingredient on hand. I’d like to experiment with other veggies in the future.

Ingredients

  • 2 large eggs
  • 2 teaspoons smoky spices, like chilli powder, paprika
  • 1 tsp garlic powder
  • 1/2 teaspoon ground black pepper, freshly ground
  • 1teaspoon table salt
  • 2 large ears of corn*
  • 2 scallions, finely chopped
  • 3/4 cup (85g) mozzarella cheese, whole-milk, grated
  • 1/4 cup (25g) Parmesan cheese, grated
  • 1/4 cup (30g) All-purpose flour
  • 1/4 cup (28g) cornstarch
  • 1 1/2 tablespoons (19g) extra-virgin olive oil

  • For best texture/flavour, use fresh, sweet corn. Canned corn is fine, but will be a tad chewier. Avoid frozen corn.
